So can I tell you how spoiled our dog is without being judged? 😉 She is SO spoiled. In the best way. Every day this pup gets two walks, at least one bone, countless belly rubs and kisses, playtime chasing after toys and she even gets to sleep in the bed with us sometimes.

Lately she’s also been even more spoiled. She has a doggy bed that she loves! It’s big and comfy and she was always going upstairs by herself in the middle of the day to lay on it. The hubs and I tend to like her to hang with us, so we’d bring the bed downstairs during the day. That got kind of old so lately she has a new throne. 🙂

We have an ottoman that is just the right size for her that wasn’t being used. It is now Jessie’s “downstairs bed”. She is not allowed on the couch or any furniture other than our bed, so this was big and it took several weeks for her to understand that it was ok. And you guys – seriously, it is so cute. Now that she is elevated, any time she wants to see what I’m up to in the kitchen she can just pop her head up and watch me. She sits high enough that she can see over the couch into the kitchen. It’s really pretty funny.

We’ve been pretty lucky with her – she is the sweetest and even though she’s spoiled, she’s also well behaved. Since we’ve yet to have kids, she gets allllllll the love. 🙂

Similarly, these Baileys Fudge Brownies will get all of your love. They are ridiculously good! I’m not even kidding that they just melt right in your mouth.

How to Make Baileys Fudge Brownies

To start, we’ve got a Baileys brownie on the bottom. It’s nice and easy to put together – just the way I like it. Feel free to use a mixer, but I usually just use a whisk (check out the video just above the recipe). Combine the wet ingredients, then the dry ones, then add them all together and bake. D.O.N.E.

Next is the Baileys fudge. Also easy. It’s just a combination of sweetened condensed milk, chocolate chips, Baileys and a little vanilla. I played around with the amount of Baileys in the fudge a bit. I wanted to make sure you could taste it, but it wasn’t overpowering. I also wanted to make sure the fudge was a good fudgy-texture. Everything is melted over a double boiler, or pot of simmering water. You could use the microwave, but it’s quite easy over the stove and melts nice and smooth.

On top of the fudge is a thin chocolate topping. There’s a touch of shortening added to the chocolate just to keep it from being too firm on top. Then everything is refrigerated until firm and cut into bars.

These brownies were a BIG hit! The flavors are terrific and they melt right in your mouth! They don’t take too long to make and set either, so gratification comes quickly. 😉

Baileys Fudge Brownies

Ingredients

BAILEYS BROWNIE

  • 3/4 cup (168g) unsalted butter, melted
  • 1 cup (207g) sugar
  • 1 tsp vanilla extract
  • 3 tbsp Baileys Irish Cream
  • 2 eggs
  • 3/4 cup (98g) all purpose flour
  • 6 tbsp (43g) natural unsweetened cocoa
  • 1/4 tsp baking powder
  • 1/4 tsp salt

BAILEYS FUDGE

  • 1/2 cup (120ml) sweetened condensed milk
  • 1 3/4 cups (11 oz | 312g) semi sweet chocolate chips
  • 5 tbsp (75ml) Baileys Irish Cream
  • 1/2 tsp vanilla extract

TOPPING

  • 6 oz chocolate chips
  • 1 tbsp shortening

Instructions

TO MAKE THE BROWNIE:

1. Preheat oven to 350°F (176°C). Grease a 9×9 baking pan or line it with parchment paper or aluminum foil, which you can use to remove the brownies from the pan when they are done.
2. Combine the butter, sugar, vanilla extract and Baileys in a medium sized bowl.
3. Add the eggs and mix until well combined.
4. In another medium sized bowl, combine the flour, cocoa, baking powder and salt.
5. Add the dry ingredients to the egg mixture and mix until well combined.
6. Pour the batter into the prepared pan and spread evenly.
7. Bake for 18-20 minutes, or until a toothpick comes out with a few moist crumbs.

TO MAKE THE FUDGE AND TOPPING:

8. Combine sweetened condensed milk, chocolate chips, Baileys and vanilla extract in a metal or glass bowl. Set the bowl over a pot of simmering water.
9. Stir mixture until everything is melted and smooth, then spread evenly over the brownies.
10. For the topping, add the chocolate chips and shortening to a microwave safe bowl. Microwave in 15 second increments until the chocolate and shortening are melted and smooth.
11. Spread chocolate into an even layer over the fudge.
12. Set brownies in refrigerator to set, 4-5 hours
13. Cut brownies into bars. Store brownies in an airtight container in the refrigerator. Brownies are best for 3-4 days, but should be ok for up to 5-6 days.

    Hi….Your recipe says “Bake for 18-20 minutes, or until a toothpick comes out with a few moist crumbs.” I tested it at 18 min, then 20 min w/a toothpick. Well, I kept taking the brownies in & out of the oven quite a few times. a minute at a time & I did not have any come out with a few moist crumbs but the edges of the brownies were starting to come away from the pan so I figured it has to be done, I then finished w/the fudge & topping & it came out very good. I was getting so frustrated/worried that these brownies would be over baked. I started watching the video but it didn’t go thru the whole process…only went so far then went onto another video. I wanted to see in your video of these brownies showing your toothpick method but it didn’t go that far. So did I do alright by taking it out of the oven when the edges started coming away from the pan? I wasn’t sure how moist these brownies should be. Please reply.

      I would recommend leaving the brownies in the oven and testing them carefully from there. Taking them in and out over and over is going to constantly bring the temperature of the brownies lower and lower, especially if it’s every couple of minutes. They were likely having a hard time keeping temperature and baking further. They may have been coming away from the edges because they were kind of cooling too much at that point and possibly not baking properly. If you watch the full video, I don’t actually show the toothpick. I would try changing up how you are testing them and see if that helps.

    I substituted Kahlua for the Baileys and they are delicious. I cut them into small squares and I’m glad I did as they are very rich. Will definitely make them again

    *For people that “don’t drink alcohol”, please realize that in this recipe, the amount of Baileys in the fudge topping is very small and it is doubtful that you will feel it, unless maybe you ate the entire batch by yourself inside of a half hour. Also, it is somewhat “cooked”, so the remaining alcohol that is actually in the recipe is negligible.

    Having said that, if you are that much of a teetotaler, or must avoid anything resembling alcohol for health reasons, look for a different brownie recipe. The internet is full of them.

      Substitutions are going to be tough for me to say without trying it. It could change the consistency of the fudge. You could try using Irish Cream flavored coffee creamer though.

    I made this tonight (Dec. 12, 2017) to give a friend for Christmas. I will have to make some more to give to her. THIS IS SO DECADENT THAT I KEEPING THIS BATCH! One comment – you are correct – only shortening for the top layer will give the chocolate the shine it has. Butter will not work. Of all the Christmas recipes I have made throughout the years….cakes, sweet breads, cookies, brittle, candy….this is the best thing I have ever made to share with family and friends. Y’all gotta try this! It is DELISH!

    Do you think these could be made with Buffalo Trace Bourbon Cream? Would the amount of cream be the same?

      I haven’t tried the brownie without eggs, but you could try it. If you have an egg-less brownie recipe you like, you could use that. I’ve also heard of people using substitutes, like applesauce, but I’ve never tried it personally.

    I just made these brownies and they are so good with a hint of Bailey’s!

    I took them to work and shared a bit with my elderly neighbour who said he said it would too rich for his tummy to eat all in one sitting. They were so delicious the next day he told me he couldn’t help himself and ate it all!

    I have a question about the fudge and topping. Did your fudge set right away because mine didn’t and when I put the topping on to try and spread it, I ended up spreading both mixtures around. I’m hoping to try it again this weekend and will let the fudge set before spreading the topping.

      My fudge was fairly thick after adding it so I added the topping right away. If you need to though, you could certainly let it set first.

        I figured I did something wrong. I made them a second time where the fudge had a stint in the fridge and it set beautifully so I just made the topping the next morning.

    I figure that Bailey’s Irish Cream is an alcoholic beverage. Can it be omitted from the recipe or is it a must. I and my family don’t indulge in alcohol.

    These are great! I made them friday en think they tast awesome. I added a little baileys to de fudge, because I used dark chocolate en found the fudge a bit too thick. Ik also poked the hot brownie with al fork and sprinkled 5 tbs. of baileys on to it. May be next time I would make an extra layer of crumbs of crackers of even oreo’s between the fudge and the brownie. This is an idea from my husband, worth trying, don’t you think?

    Can you use butter in the fudge instead of shortening? I do not have shortening on hand and do not typically buy it. Thanks.

      Butter should be fine instead of the shortening in the topping. It *might* not firm up as much and could be a little softer to the touch, but should be fine otherwise.

    With the “baileys” you write, is that Irish cream? In you’re other post you specify. I’ve seen lots of flavors. I’d imagine you could use any of them for these brownies, or even all you’re other deserts?

      Yes, it’s the Irish Cream. I updated the ingredients list to be more specific. It’s funny, the different flavors of Baileys are more recent so I always forget about them. I bet some of the varieties would be yummy in these! 🙂
