Homemade Nutella Fudge Brownies
Do you ever have those days where you have all these things on your list to get done and you really think you’ll actually have time to accomplish them? Like, really. You’re sure it’ll all get done.
Then the end of the day comes along and you didn’t even get to half of it?
Then you’re like, well I need to feel better about all I accomplished so let’s add the things that I did that aren’t on the list so that I can cross them off too and feel more accomplished.

So many things. ALL the things! So little time.
Fortunately, at the end of a long day of accomplishing many things (thought not ALL the things) there are bars like these to reward you for your hard work and a job well done. And really, is there any better reward than Nutella and chocolate? Fudge and brownie? I didn’t think so.
The brownie is a modified version of this very popular quick and easy brownie recipe on my site. They are so loved for two reasons – they are tasty and they are super easy to make. Of course not one to make things simple for myself, I decided to modify the brownie. The other one calls for oil and I decided to try it with butter. I also made a few other changes to make this brownie more fudgy and a little less cakey. The final brownie is perfectly dense and fudgy, without being too dense. Love.
The brownie is topped with fudge. Nutella fudge. I love all things Nutella. It always amazes me when Nutella actually makes it into a recipe and doesn’t just land straight in my mouth on a big fat spoon.

The fudge is easy to make by combining sweetened condensed milk, butter, chocolate and Nutella. Everything is melted and combined on the stove before being spread over the brownie.
I topped the bars with a little bit of chocolate. It’s note entirely necessary but I think it finishes it off well. There’s a touch of shortening mixed into the chocolate so that it’s not super hard to bite into on the bars. You could switch out the shortening for a tablespoon or two of heavy cream, if you prefer.
These bars are little bites of heaven and they are quite simple to make. They are fairly rich, so they go a long way. I tend to be someone who cuts big pieces, but you really don’t need big pieces of these bars. Fudge can have that effect. Fortunately for us that means the bars last longer! YAY!!

Description

Ingredients
BROWNIE
- 3/4 cup unsalted butter, melted (I use Challenge Butter)
- 1 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 3/4 cup flour
- 6 tbsp cocoa
- 1/4 tsp baking powder
- 1/4 tsp salt
FUDGE
- 14 ounce can sweetened condensed milk
- 2 tablespoons unsalted butter, room temperature
- 1 1/2 cups (9 oz | 254g) chocolate chips
- 1 cup chocolate-hazelnut spread, such as Nutella
TOPPING
- 1 cup (6 oz | 169g) chocolate chips
- 1 tbsp shortening
Instructions
1. Preheat oven to 350°F (176°C). Grease a 9×9 baking pan or line it with parchment paper or aluminum foil, which you can use to remove the brownies from the pan when they are done.
2. Combine the butter, sugar and vanilla extract in a medium sized bowl.
3. Add eggs and mix until well combined.
4. Combine flour, cocoa, baking powder and salt in another medium sized bowl.
5. Slowly add dry ingredients to the egg mixture until well combined.
6. Pour the batter into the pan and spread evenly.
7. Bake for 18-20 minutes, or until a toothpick comes out with a few moist crumbs.
ONCE THE BROWNIE IS COOLED, MAKE THE FUDGE:
8. Combine sweetened condensed milk, butter, chocolate chips and Nutella in a metal or glass bowl. Set the bowl over a pot of simmering water.
9. Stir mixture until everything is melted and smooth, then spread evenly over the brownies.
10. Set brownies in refrigerator to set.
11. Once set, add chocolate chips and shortening for topping to a microwave safe bowl. Microwave on 15 second increments until the chocolate and shortening are melted and smooth.
12. Spread chocolate into an even layer over the fudge.
13. The chocolate should cool quickly and become firm. Cut into bars.
Store brownies in an airtight container in the refrigerator. Brownies are best for 2-3 days, but should be ok for up to 4-5 days.

I have made this a couple times now. Big hit with everyone. The only sub I did was omitting the shortening and melting 2 Tbsp of Nutella with the chocolate

Can you make this in a 8.5x 11? Also for the fudge layer can you melt the chocolate in the microwave and mix everything else after?
That size pan should be fine, you just might need to adjust the baking time for the brownies a bit and keep in mind that the brownies will be a little thinner. As for melting the chocolate in the microwave and then adding everything else – I wouldn’t suggest that here. You could try heating it all together in the microwave, but keep in mind that chocolate seizes and separates easily. If you melt the chocolate and add the other ingredients while they aren’t warm, your chocolate will likely seize. And if you do everything together in the microwave, it might be ok, but just don’t let the mixture get too hot (which is easy to do in the microwave). Heating it too much can cause the fats (like the butter) to separate and settle on top of the fudge.

Hi. How many Grams/oz are 1.5 cups chocolate chips. Not sure if I will get the answer in time since I am making them now. But I will just guess otherwise. I am not sure what size your chips are. Since size will make quite a difference.

Delicious, but you cannot eat more than one little piece of it… it’s a BOMB of SUGAR! Made them last night, but for sure next time I’ll need to “cut” some sugars for it…

I made these amazing brownies twice now. They taste amazing but both of the times I made them, the fat separated from the fudge as I was making it, leaving big marks of fat on top of the brownies. Any tips?
Hmm, it could have to do with the brand of chocolate or possibly overheating the chocolate. It’s hard to say.
I have a delivery route and I decided to make these to pass out along the way. I made them the tonight before and they turned out excellent. They look just like the picture on this site, but they tasted even better!!!!! I have to confess I started with a store-bought brownie mix. I guess not everybody was meant to start from scratch. Do you refrigerate de brownie to put the fudge when its completely cold or do you put the fudge just before it gets ready, and the brownie its still a bit warm, and then refrigerate ?

Yes, 1/4 tsp baking powder. The fudge is added after the brownies are cooled to room temperature.

I made these for my hubby’s birthday, this week, and they were the hit of the party! I’ve never heard so many people “yummmmm-ing” at the same time in my presence! I used dark chocolate chips for the top layer and it unfortunately seized when I was microwaving it, so my top layer was more like a crumb layer, but still tasty. I probably won’t be able to replicate it, but look forward to the smooth layer on my next attempt!

What is shortening?
It’s a fat that’s much like butter.

I would suggest storing the brownies in an airtight container in the refrigerator. Brownies are best for 2-3 days, but should be ok for up to 4-5 days.
Oven only goes up to 250 degrees (UK), any suggestions?

350 degrees is in Fahrenheit. It should be 176°C, I believe.

I am going to make this amazing cake, but I have a question: How much time shuld I stir the fudge over the shimmering water, to get the right consistency? I’m affraid that the fudge layer will not set in the fridge (condensed milk and Nutella are quite liquid) and completely melt when I remove the whole cake from the fridge. I would like to take the cake to work, so I care about right structure of the cake.

I didn’t keep track of the amount of time. You just want to stir it until it’s melted, no longer. It should set fine.

If you are in Australia the substitute is either margarine (Flora) or the more authentic replacement is Copha – found in the butter section!
I don’t think Copha is anything like shortening – except the color!

Is there any tricks to cutting these amazing looking brownies – i know with caramel squares i need to dip a knife in hot water to stop the top chocolate layer from shattering into lots of untidy pieces? Any tips welcome or is it straight forward to cut?
I believe these were pretty cold and firm when I cut into them. I just used a sharp serrated knife. Certainly a warm knife might help.
