I’m pretty much the worst slow cooker user ever. Did you know that for a slow cooker to actually cook food you have to add food to it? I know, crazy right?

I have this problem where I constantly go off and forget to add the food so that it cooks while I’m at work. No matter how many times I do it, I keep doing it.

Last night I got home and realized that despite having set everything up the night before so that all I had to do was throw it in the pot before I left, I still forgot. I even put the cooker on the counter the night before with the liner. *shakes head*

Like I said, I’m a slow cooker failure. So I just threw everything in a pan and cooked it instead.

I’m always distracted in the mornings when trying to get my photos taken before I leave for work. That’s my problem. Too many distractions.

But can you blame me? With desserts like this No Bake Funfetti Cheesecake distracting me, what’s a girl to do?

One of my very favorite things is Funfetti. And not just any Funfetti, but cake batter flavor. Sprinkles alone won’t cut it.

In this cheesecake though, I decided not use an actual cake mix. Instead I used some butter and almond flavoring, which lends a cake batter flavor. It’s added to my usual base recipe for a no bake cheesecake.

I also used my very favorite Oreos – Golden Birthday Cake Oreos. They are the jam! I like them even better than the regular chocolate birthday cake Oreos. They make up the crust and every bite with the crust makes the cheesecake that much better. If you don’t have access to the Oreos though, you could substitute another vanilla cookie.

This cheesecake is made in a springform pan, which allows you to remove the sides of the pan when it’s done so that you have the nice cheesecake you see in the photos.

I explain that because a while ago, I got a call from my mom who was trying to find a dessert on my blog to make for some friends coming over. She was eyeing my No Bake Oreo Cheesecake, but didn’t know what a springform pan was. HA!

While I totally understand that not everyone knows what one is, but it makes me laugh that my own mom is one of those people. I totally gave her a hard time. She didn’t even have measuring spoons until I got her some for Christmas. Proof that when she says she doesn’t bake, she means it. She does cook though. And she cooks well. But she just adds some of this and some of that. No need to measure!

Of course after I explained what the springform pan was, her next question was, “Can I just use a pie pan?”

*face palm*

So if you’re wondering, this could be made in a pie pan. But if you have a springform pan, go with that. It turns out much prettier. I promise. 😉

No Bake Funfetti Cheesecake

Description

This No-Bake Funfetti Cheesecake is a fun and easy cheesecake recipe! A thick, creamy, delicious cheesecake and full of sprinkles and cake batter flavor!


Ingredients

CRUST

  • 2 1/2 cups Golden Birthday Cake Oreo crumbs
  • 3 tbsp butter, melted
  • 2 tbsp sprinkles

FILLING

  • 24 oz cream cheese, room temperature
  • 1/2 cup + 2 tbsp sugar
  • 2 tbsp flour, heat treated
  • 2 tsp vanilla extract
  • 1 1/4 tsp butter extract
  • 1 1/4 tsp almond extract
  • 3 tbsp sprinkles, plus more for topping
  • 12 oz Cool Whip, divided (or homemade whipped cream)

Instructions

1. Combine Oreo crumbs with melted butter and sprinkles.
2. Press crumbs into the bottom and halfway up the sides of a 9 inch springform pan. Set in refrigerator to firm.
3. Mix cream cheese, sugar, flour, vanilla, butter and almond extracts together in a large bowl until smooth and well combined.
4. Gently stir in 8 oz of Cool Whip and sprinkles.
6. Pour filling evenly into the crust and smooth the top.
7. Refrigerate for about 4-6 hours or until firm.
8. Remove cheesecake from springform pan and top with remaining whipped cream and additional sprinkles. Refrigerate until ready to serve.

    I have a question: how many boxes of the cookies does 2 1/2 cups make? Also, is the remaining cool whip used for the frosting on top to decorate? Thank you, love this recipe!

      It should be roughly 25 oreos in 2 1/2 cups of crumbs and yes, the remaining cool whip is for decorating. I hope you enjoy it!

    Isn’t that a strange feeling to turn into an adult and suddenly be…better at something than your mom? What!? But don’t worry about the slow cooker. Even though I’m generally pretty good at it, I HAVE done the one where you turn it to the warm setting instead of low. Twice I’ve come home to a nice pot full of warm, rock hard beans. (sigh) Everyone does it, believe me.

        I’m usually able to find it at my grocery store. And often if I can’t find an ingredient, Walmart will have it. If neither of those work, there’s always Amazon. 🙂 But if you don’t want to deal with all that, you could just replace the extracts with vanilla. The goal of the butter and almond extracts is to give the cheesecake a little more of a cake batter flavor (which has butter), but vanilla will still make a great tasting cheesecake.

      Try the Instant Pot!! We use ours constantly!!! It can do sooo many things. Our fav usage is for rice and meats that cook quickly and fall apart like nothing I’ve ever had!! The pressure cooker option is our most use bcuz of speed, ease of set up (throw it all in, let it go!), and how moist the food is. Waaaaay better than slow cooking (taste and speed), its the best and most used appliance in our house, other than the microwave (for reheating those awesome foods!)!!!
