I’ve been wanting to bake with Oatmeal Cream Pies for forever. I absolutely love them. Every time I see them in the grocery store, I want to buy the whole box and devour them right then and there.

I just love the taste and chewy texture of those little cookies.

So when I thought about what to make with them, I wanted to make sure you could still taste those amazing little oatmeal nuggets. Eventually I arrived on these bars.

Why I Love These Indulgent Oatmeal Bars

With layers of crisp oatmeal cookies, oatmeal cream pies, nutella, mini marshmallows and three kinds of chocolate chips, I knew they’d be awesome! Plus, it’s all smothered in sweetened condensed milk. The mother of all that is sweet!

This is one of those funny instances where after baking them, I almost threw them out. I initially thought they were a big fail. And I was about to be super disappointed.

I was getting ready to take pictures and started to cut into them. They are the epitome of gooey! And when looking at them, it seemed like the oatmeal cream pies got lost.

But then I bit into them.

Oh. my. goodness. The flavor is sinful. Indulgent. Amazing. And the oatmeal cream pies do not get lost.

Oatmeal cream pie, nutella and white chocolate and cinnamon chips combine to make the most delectable bar. And with as gooey as they are, they stay moist and delicious for days and days.

So what I initially thought was a fail ended up being the opposite.

They were a huge hit with my neighbors too. They couldn’t stop eating them right along with me. So stinkin’ good. Even better than I imagined. If you like oatmeal cream pies and sweet things, you have got to make them. You will love them!

Oatmeal Cream Pie Gooey Bars

Description

These Oatmeal Cream Pie Gooey Bars are dripping with deliciousness – literally! They’re sweet, chewy, and packed with decadent flavor!


Ingredients

  • 1 1/2 cups oatmeal cookie crumbs (I used most of a 12 oz box)
  • 1/2 cup butter, melted
  • 1/2 cup Nutella
  • 10 oatmeal cream pies, chopped into pieces
  • 1 14 oz can sweetened condensed milk
  • 1 cup white chocolate chips
  • 1 cup mini marshmallows
  • 1 cup cinnamon chips
  • 1/2 cup butterscotch chips

Instructions

1. Preheat oven to 350 degrees.
2. Line a 9×9 pan with parchment paper that sticks up above the sides of the pan. You can use those edges to lift the bars out of the pan when done.
3. Combine oatmeal cookie crumbs and melted butter and press into bottom of pan.
4. Heat Nutella until just pourable. Pour over crust, spreading evenly.
5. Spread chopped oatmeal cream pie pieces in an even layer over Nutella.
6. Pour about 1/2 cup of sweetened condensed milk on top of oatmeal cream pies.
7. Top with white chocolate chips, mini marshmallows, cinnamon chips and butterscotch chips.
8. Pour remaining sweetened condensed milk over the top.
9. Bake for 25 minutes. Bars may still be giggly, just will harden as they cool.
10. Allow bars to cool in pan.
11. Once cool, lift bars from pan and cut into squares.

    There is absolutely no need to be sorry! We all have different tastebuds! I guarantee there are things I would make that other people wouldn’t care for! You sort of expect with Pinterest that some things you will love and others not-so-much! I will have to try some more of your recipes, I just didn’t pick the right one for my tasters to start with! 🙂

    After reading several comments about people wanting to eat the whole pan, I decided to make them for company. But boy, they were rich! I made them for company, and everyone said they were too sweet and I was left with basically the entire pan after a party of six adults left! I even took leftovers to my neighbor, and she said a little goes a long way. Before you make these, consider whether or not you like extremely sugary, rich desserts!

    These were so delicious! I couldn’t find cinnamon chips so I just sprinkled a little cinnamon on top of the Nutella, seemed to work just fine. Thanks for the amazing recipe!
