This wonderful pie is a copycat version of the delicious Kahlua Ice Cream Pie from On The Border. It’s one of the hubs and my favorite desserts!

Kahlua Ice Cream Pie

Have you ever been to On The Border? It’s a mexican restaurant. The hubs and I love it. We used to go all the time, but there isn’t really one near us anymore.

I didn’t really grow up eating mexican food – it just wasn’t something my mom cooked a lot of. I credit the hubs for really introducing me to and helping develop my love for it. Especially when it’s something smothered in cheese…I have a weakness for melted cheese.

Anyways, this dessert has long been an agreed upon favorite between us. Since we can’t go and get it as often as we used to, it’s only natural that I’d finally get around to making my own version.

Speaking of favorite versions…my favorite version of the hubs showed up at our house last week. 😉

He teaches tennis and the month of December was reallllly slow. And truthfully January isn’t starting off so hot either. With all the rain and cold weather, the hubs has had a lot of down time. He has NOT been a fan. And the longer it lasts, the less he’s been enjoying the time off.

At first he was just bored. Then he got really bored. Then he got desperate. Do you know what happens when the hubs is THAT bored? Well I didn’t know either. But apparently he cleans the house. Wha wha!?

And then he obsesses about things staying clean.

I sure wish he didn’t have to work and this guy could stick around. I like him. 🙂

I came home to him redoing the caulking in our shower (which had been cracked a bit), fixing the door which had the magnet slipping on the bottom and he cleaned the grout in between the tiles in the shower better than I ever have. It looks brand spankin’ new!

The secret he says? Baking soda and water.

He didn’t stop there, but that was hands down the biggest surprise to come home to. Pretty awesome if you ask me.

How to Make Kahlua Ice Cream Pie

Anywho, back to the pie. It’s made using my favorite no-machine ice cream recipe. One day I suppose I’ll get around to actually making some ice cream with my ice cream machine, but this recipe is just so easy! And it really is just as creamy and wonderful as the real thing! Why make life complicated if it doesn’t need to be?

The ice cream has the usual suspects – cream cheese, milk, sugar and cool whip. Added to the base is espresso, Kahlua and some Oreos. And it all sits in an Oreo crust and gets covered with a layer of chocolate sauce.

I add additional chocolate sauce and Kahlua cream as I slice it. The perfect finishing touch! I really do love the additional Kahlua.

This pie was a big hit with myself, the hubs and his family. It disappeared in no time! Like magic!

Kahlua Ice Cream Pie

Description

This wonderful pie is a copycat version of the delicious Kahlua Ice Cream Pie from On The Border. It’s one of the hubs and my favorite desserts!


Ingredients

CRUST

  • 2 cups Oreo crumbs (from about 20 Oreos)
  • 1/4 cup butter, melted

FILLING

  • 2 tbsp warm water
  • 2 1/2 tsp instant espresso
  • 1/4 cup milk
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/8 cup kahlua
  • 8 oz Cool Whip
  • 57 Oreo wafers, broken into large pieces (centers removed)
  • 3/4 cup chocolate sauce

KAHLUA CREAM

  • 1 cup whipping cream
  • 2 tbsp powdered sugar
  • 1 tbsp kahlua

Instructions

1. Combine Oreo crumbs (for crust) with melted butter.
2. Line a 9 inch springform pan with parchment paper. Press Oreo mixture into the bottom and halfway up the sides of the pan. Set in refrigerator to firm.
3. Dissolve espresso into warm water.
3. Combine espresso, milk, cream cheese, sugar and Kahlua together in the bowl of a stand mixer, or with a hand mixer. Mix until completely combined.
4. Fold in the cool whip.
5. Add 1/3 of the filling to the crust into spread into an even layer.
6. Add a layer of Oreo wafers. It won’t be fully covered, just some wafer pieces scattered over the filling.
7. Add the second 1/3 of the filling and spread into an even layer.
8. Scatter remaining Oreos wafer pieces across filling.
9. Add remaining 1/3 of filling on top of Oreos and spread. Smooth the top of the pie.
10. Pour chocolate sauce in an even layer on top of the filling. You may need to use an offset spatula to spread it.
11. Freeze pie.
12. To make the Kahlua cream, freeze your metal mixing bowl and whisk for 15-20 minutes to get them good and cold.
13. Remove bowl and whisk from freezer and add whipping cream, powdered sugar and Kahlua.
14. Whip on medium speed for 3-4 minutes, until cream is thickened but pourable.
15. Serve pie slices with additional chocolate sauce and Kahlua cream.
