Strawberry and Blueberry White Chocolate Oatmeal Cookies

My husband has declared these to be “the best cookies he’s ever had.” That is quite a statement, isn’t it? They are full of strawberries, blueberries, white chocolate, cinnamon and oatmeal and I have to say – I agree with him.

Normally I chase after him to try the things I make. He can be a great tester most of the time, but since he’s not as into sweets as I am sometimes getting him to eat much of it is a bit of work.

He’ll tell me he really likes something and then let it sit for days. Eventually I’ll assume he doesn’t want it (or more honestly, I’ll no longer to be able to resist) and eat it myself.

When he finds I’ve eaten it, he freaks out because he wanted it and now it’s gone. Oops!

But what did he expect? Really. I mean, how was I supposed to know? It sat there for a full two days (hypothetically). Personally if it makes it 24 hours without jumping into my belly (It does it on it’s own, I swear!), I think I’ve really achieved something.

Truth is I’m jealous of his ability to not even notice the cake sitting on the counter. If only. Instead, cake finds me wherever I am and stares at me with all its sweet goodness until I cave. And I always cave. And then it makes itself a home somewhere on my body.

Don’t get me wrong. I see nothing wrong with having a piece of cake. It’s the second and third piece that I probably shouldn’t have eaten. Most likely it was the hubs’ piece. ๐Ÿ™

So anyways, back to these cookies. In this particular instance I made the cookies when he wasn’t around and when he got home I didn’t bother seeking out his opinion because I was already in love with them.

That night, I’m getting into bed and he comes up the stairs and just stops in the doorway to our bedroom.

I’m like what happened? Is everything ok?

He holds up the half eaten cookie and says, “This is the best cookie I’ve ever had.”

Then the next day he takes the bag of cookies and makes his own bag, declares them to be his and sets them aside so that I don’t eat them before he can. Oh how he knows me. ๐Ÿ™‚

And he’s so right. They are the best cookies ever. The cinnamon-y oatmeal is perfect and the cookie is so soft and chewy you wonder how it all stays together.

The longer they sit the softer they get. The moistness of the fruit just seems to be absorbed by the oatmeal as time goes by and it seems like they are literally melting in your mouth.

And the pops of strawberries and blueberries in the cookie? Divine. Seriously. The perfect balance of fruit, cinnamon and oatmeal.

The best. cookie. ever.

And the colors are just perfect for a patriotic holiday don’t cha think? Fourth of July anyone?

Strawberry and Blueberry White Chocolate Oatmeal Cookies

Yield: Makes 18-20 cookies, about 2 1/2 inches in size


3/4 cup butter
3/4 cup light brown sugar
1/4 cup sugar
1 egg
2 tsp vanilla extract
2 tsp cinnamon
1 3/4 cup flour
2 tsp cornstarch
1 tsp baking soda
2 1/2 cups Old Fashioned Oats
1/2 cup white chocolate chips
1/2 cup cut strawberries
1/2 cup blueberries


1. Preheat oven to 350 degrees.
2. Cream butter and sugars together until light and fluffy, about 3-4 minutes.
3. Mix in egg and vanilla extract.
4. Add cinnamon, flour, cornstarch and baking soda to a medium sized bowl and combine.
5. With the mixer on low speed, add flour mixture to butter and sugar mixture.
6. Stir in old fashioned oats and white chocolate chips. Dough will be thick.
7. Carefully add strawberries and blueberries.
8. Make dough into balls of about 2 tbsp, roughly the size of a ping pong ball. Flatten them out a bit and place on cookie sheet covered with parchment paper.
9. Bake for 10-11 minutes. They should be slightly golden on the edges and look a little underdone in the center.
10. Remove from oven and allow to cool for a couple minutes before putting on a cooling rack.
